[Grocery Basket Graphic (4656 bytes)]“Skin-On” Potato Salad

8-10 medium red potatoes

Scrub, cut into bite-size pieces – place on a foil-lined cookie sheet that has been sprayed with Pam. Salt lightly. Bake at 450 for 30-35 minutes. Sprinkle with olive oil and allow to cool. Chop 1 bunch scallions and 4 or 5 hard-cooked eggs.

Dressing

  • ¾ c. Hellmann's Mayo
  • ¼ c. Hellmann's Mustard Blend
  • 1 T ea. Sugar and Vinegar
  • Pepper to taste

Combine all and refrigerate.
