Carrot Cake
(350° - 1 hour)
- 2 cups sugar
- 1 tsp. salt
- 2 c. grated carrots
- 1 cup coconut
- 3 eggs
- 1½ cup nuts, chopped

- ½ cup oil
- 3 cups flour
- 2 tsp. vanilla
- 2 tsp. baking soda
- 1 cup (small can) pineapple (drained)

Mix all dry ingredients, add oil, eggs, carrots and drained pineapple. Mix until well
blended. Bake in well greased or tube pan at 350° for one hour.
Frosting
- 1 - 3 oz. pkg. cram cheese
- 1 stick butter or margarine
- 2 c. powdered sugar
Blend until smooth. Frost.
