Carrot Cake

(350° - 1 hour)

  • 2 cups sugar
  • 1 tsp. salt
  • 2 c. grated carrots
  • 1 cup coconut
  • 3 eggs
  • 1½ cup nuts, chopped
  • ½ cup oil
  • 3 cups flour
  • 2 tsp. vanilla
  • 2 tsp. baking soda
  • 1 cup (small can) pineapple (drained)

Mix all dry ingredients, add oil, eggs, carrots and drained pineapple. Mix until well blended. Bake in well greased or tube pan at 350° for one hour.

Frosting

Blend until smooth. Frost.
