Separate eggs, beat whites until stiff. Add 1 cup sugar and beat again. Set aside. Cream oleo and 2 cups sugar, add egg yolks and cream until light and fluffy. Add sifted flour - 1 cup at a time. Add vanilla, then 1 cup flour and maple flavoring, add bourbon, and 3rd cup of flour. Blend well and fold in egg whites. Add ⅓ cup of walnuts. Grease pan well & sprinkle bottom of pan with ⅔ cups chopped nuts. Bake at 350° 1½ hours or until done.
When almost cool, take cake out, bottom side up. Sprinkle loose frosting on top of cake.
May be baked in 10" tube or large angel food pan or loaf.
