title('ab_c','Interpreter','none') % Setting the Interpreter property to 'none' is often the best solution to get a literal _

xlabel('x_{53}') % Multi-character subscript

ylabel('filtered\_level < e^{j2\pi f_0}') % Use the escape character \ to get a literal _ when you want other text to still be interpreted

h = legend('xy_z'); % Interpreter doesn't work quite the same way with legend...

set(h,'Interpreter','none') % ...but you can use a handle to disable TeX interpretation and display literal text
